Our family had a dreamy week. Tom and Mollie were the most wonderful hosts, catering to our every need in the most comfortable, gracious manner. The boat accommodated us all so comfortably and was perfectly appointed so that we could take full advantage of relaxing among the natural beauty around us. We were so well taken care of from start to finish, from our fabulous itinerary, our sails, our excursions, and the amazing food and drinks, it was a week we will never forget. We are already think.

Tom & Mollie, (Hot Tamale). You did an amazing job making our yacht an idyllic vacation destination. But the best part was you two – you welcoming spirit and enthusiasm for making our family vacation and Christmas so memorable! Tom, you are such a calm, confident skipper and we loved our sails this week. You take such meticulous care of the boat! Mollie, the food was absolutely amazing and every day blew us away! We come away with so many memories – barracuda, amazing latte, back flips, the cave.
You did an amazing job making our yacht an idyllic vacation destination.

Born and raised in Sicily in the south of Italy, Umberto has spent a great deal of time around the water. Even as a young child he was passionate about watersports, fishing and outdoor activities. After he received his bachelor’s degree in business administration in Milan, he traveled to Australia to work in hospitality at the famous Sydney Opera House, he also lived in Hong Kong for 4 months while interning for a digital start-up.
In 2017 he found himself back in Italy and decided to spend more time on the water and thus started working for The Yacht Week, a popular flotilla company that operates in the Mediterranean but also in other locations like BVI, Martinique and Tahiti. Starting as a Skipper and moving quickly to higher positions such as Lead Skipper and Route Manager. For 2 years he also held the role of Instructor for Quarterdeck, a company that trains and mentors professional skippers.
In the 6 years he worked for Quarterdeck and The Yacht Week, he completed more than 80 charters in several locations around the Mediterranean and abroad, covering more than 100,000 nautical miles. When not on the water, he also likes to drive motorbikes. One of his most memorable trips was in India driving through the highest motorable pass in the world at +5.000 meters of altitude.

Chef Kylie Parrish
Meet Kylie, a California native with an unbreakable bond with the water and a deep love for culinary arts. Growing up visiting lakes throughout the state, boats became her second home, while her mother’s homemade meals kindled a culinary passion. This love for food and exploration led her to Spain during her college years, where she not only absorbed the rich culture but also embarked on her first formal culinary course.
After college, Kylie initially started her career in commercial real estate in NYC but felt the call for change. In 2022, she embraced her Croatian roots and started her yacht chef career in the Mediterranean. This not only satisfied her love for the sea but also allowed her to explore her culinary talents.
Kylie’s voyage extended beyond cooking. She transitioned into an instructor role, sharing her culinary wisdom with aspiring chefs, from provisioning to the art of plating. Her galley became a classroom as she taught the intricacies of baking onboard a yacht.
Recently, Kylie enriched her skills through a highly accredited Yacht Chef course. Her journey as a chef remains ever-evolving, driven by her dedication to fresh ingredients, homemade craftsmanship, and an insatiable appetite for learning. With a fusion of global inspiration and culinary artistry, Kylie’s culinary journey unfolds with each new creation.
