Our Christmas and New Year charter clients are getting ready for their upcoming charters, and we want to wish them all the best on their exciting vacations: make lots of memories! As a former yacht chef, I still love cooking and baking for Donald and our friends, and I am sharing my favorite Christmas appetizer recipe below.

Caramelized Onion & Brie tarts – Serves 10-12

8 sheets Filo pastry (if not available, puff pastry is OK)
2 tablespoons butter
2 large onions sliced very thinly
2 heaped tablespoon brown sugar
325gr (11.5oz) Brie
2 egg yolks
1⁄2 cup (125ml) cream
Garnish 1⁄2 lettuce, soy sauce

Pre-heat oven.
Spray the muffin tray with Pam spray.
Use 4 sheets of Filo pastry together, cut each square into six pieces, and line up cups of muffin tins with filo so you have 10 or 12 little tarts.
Melt the butter in a large frying pan and sauté́ the thinly sliced onions.
Add the brown sugar, and sauté́ until sugar begins to caramelize.
Turn off the heat.
Add the diced Brie.
Spoon the Brie mixture into the tarts. In a small bowl, whisk the egg yolks with the cream.

Bake for 20 minutes until tarts rise and pastry is golden brown.
Let stand for a few minutes.
Scoop tarts from the muffin tray when ready to serve using 2 spoons.

TO SERVE
Thinly shred lettuce mixed with soy sauce. Place lettuce around the inside of individual side plates in a circle and then place Brie tart in the middle.
