ODE TO THE CHARTER CHEFS
As a former charter chef, I have a deep appreciation for the incredible amount of work that goes into delivering exquisite meals, day after day, throughout a 7-night, 8-day charter.
The thought and planning begin weeks before the guests step aboard. The broker sends out a detailed preference sheet covering food allergies, likes, dislikes, dietary requirements, and special requests. The chef studies every detail and creates a menu designed around the individual preferences of everyone on board.
Charter chefs are skilled at accommodating an extraordinary range of dietary needs — pescatarian, vegetarian, vegan, nut allergies, celiac, lactose intolerance, gluten intolerance, low-carb, high-protein, and everything in between.
Then comes the provisioning. Every ingredient must be carefully selected, sourced, purchased, stored, and prepared — often while working within the limitations of an island or remote destination.
And then the magic happens. The preparation, presentation, and execution of each dish can be a genuine masterpiece.
One comment we heard repeatedly on our yacht was, “We eat healthier on board than we do at home!” But don’t get me wrong — that certainly doesn’t mean fruit and vegetables all day! There is still plenty of indulgence in pastries, desserts, and irresistible treats that stay with you long after the charter — perhaps on the hips, but definitely in the memories!
So, I raise a glass to the incredible charter chefs out there — working tirelessly behind the scenes and playing such an important role in making every charter unforgettable.
