CARAMELIZED ONION & BRIE TARTS
Serves 10–12
Ingredients
8 sheets filo pastry (puff pastry can be substituted)
2 tablespoons butter
2 large onions, very thinly sliced
2 heaped tablespoons brown sugar
325 g (11.5 oz) Brie, diced
2 egg yolks
½ cup (125 ml) cream
To garnish:
½ lettuce, finely shredded
Soy sauce
Method
Preheat the oven to 375°F (190°C) and lightly spray a muffin tray with cooking spray.
Layer 4 sheets of filo pastry together and cut into six squares. Repeat with the remaining filo. Gently press the pastry squares into the muffin cups to create 10–12 small tart shells.
Melt the butter in a large frying pan and sauté the thinly sliced onions until soft. Add the brown sugar and continue cooking until the onions are golden and caramelized.
Remove from the heat and gently stir in the diced Brie. Spoon the caramelized onion and Brie mixture into the prepared tart shells.
In a small bowl, whisk together the egg yolks and cream. Spoon a little of the mixture into each tart.
Bake for approximately 20 minutes, or until the pastry is crisp and golden brown.
Allow the tarts to stand for a few minutes before carefully removing them from the muffin tray using two spoons.
To Serve
Finely shred the lettuce and lightly toss it with soy sauce. Arrange the lettuce in a circle around each individual side plate and place a warm caramelized oni
